- 2 pounds potatoes (russet, Yukon gold, or red), peeled and sliced or cubed
- 1 large onion, sliced
- 2–3 cloves garlic, minced
- 2 tablespoons butter or olive oil
- 1 cup chicken or vegetable broth
- 1 teaspoon dried thyme or rosemary
- ½ teaspoon paprika (smoked or sweet)
- Salt and freshly ground black pepper, to taste
- Optional: fresh parsley, for garnish
Instructions
- Prepare the Vegetables: Peel and slice or cube the potatoes. Slice the onion thinly and mince the garlic.
- Sauté the Aromatics: In a large skillet over medium heat, melt the butter or heat the olive oil. Add the sliced onions and sauté until translucent and slightly caramelized (5-7 minutes). Add the minced garlic and cook for 1 minute, being careful not to burn it.
- Add the Potatoes: Add the potatoes to the skillet and toss them with the onions and garlic. Cook for a few minutes until the edges are lightly browned.
- Add Liquids and Seasonings: Pour in the broth and add thyme or rosemary, paprika, salt, and pepper. Stir gently to combine. Bring to a simmer, then reduce the heat to low.
- Smother the Potatoes: Cover the skillet tightly and cook for 20-30 minutes, stirring occasionally, until the potatoes are fork-tender. Add more broth if needed to prevent drying.
- Final Adjustments: Remove the lid and simmer for a few minutes if the sauce is too thin, allowing it to thicken. Adjust seasoning to taste.
- Serve: Garnish with fresh parsley and serve hot as a side dish.
