  • 2 tablespoons butter or olive oil
  • 1 cup chicken or vegetable broth

  • ½ teaspoon paprika (smoked or sweet)
  • Salt and freshly ground black pepper, to taste

Instructions

  • Prepare the Vegetables: Peel and slice or cube the potatoes. Slice the onion thinly and mince the garlic.
  • Sauté the Aromatics: In a large skillet over medium heat, melt the butter or heat the olive oil. Add the sliced onions and sauté until translucent and slightly caramelized (5-7 minutes). Add the minced garlic and cook for 1 minute, being careful not to burn it.
  • Add the Potatoes: Add the potatoes to the skillet and toss them with the onions and garlic. Cook for a few minutes until the edges are lightly browned.
  • Add Liquids and Seasonings: Pour in the broth and add thyme or rosemary, paprika, salt, and pepper. Stir gently to combine. Bring to a simmer, then reduce the heat to low.
  • Smother the Potatoes: Cover the skillet tightly and cook for 20-30 minutes, stirring occasionally, until the potatoes are fork-tender. Add more broth if needed to prevent drying.
  • Final Adjustments: Remove the lid and simmer for a few minutes if the sauce is too thin, allowing it to thicken. Adjust seasoning to taste.
  • Serve: Garnish with fresh parsley and serve hot as a side dish.
